hey Dr will Lee here I am in the
Mediterranean doing my research on the
summer on food as medicine I'm in a
fresh market and I want to show you some
of the things that I found to make a
comment on our food system that I think
a lot of people aren't appreciative of
so first of all check out this
atmosphere it's very social people
coming from all over the place they sell
a lot of different types of things
cooked Foods flowers
fruits and vegetables but I want to show
you one thing right here look at this
eggs fresh eggs okay on Plein Air
meaning that it's just uh out there and
open it's not in the refrigerator now in
the United States we normally find eggs
in the fridge section right
I want to make a comment about that the
reason you don't find eggs refrigerated
and you can just keep them on the
countertop when you buy them from the
market in the Mediterranean is that the
eggs won't go bad now why is that it
turns out that when chickens lay eggs
they naturally secrete a little layer a
protective layer that's bacteriostatic
meaning it's almost like an antibiotic
that prevents bacteria from growing and
penetrating it is also a little shell
not just the egg shell but that coating
on top of the egg to prevent any leakage
or cracks to get into contaminate that
egg now what happens in the United
States is that the eggs come out of the
kind of a factory farm they are sprayed
with water chemicals other cleansers in
order to be able to wash all that dirt
and stuff off the egg you kind of see a
little bit of it over here and then what
that does is that washes off that
natural protective layer and now it's
much easier for bacteria to invade tiny
little cracks that might actually happen
when you're shipping or trans or moving
the eggs around and that's why we have
to keep eggs the refrigerator in the
United States but not where they're
actually grown more locally and not
washed
another fact that it's important to
understand when you're actually going
shopping because when I first saw eggs
sitting out just like this I said man
they must be going bad just the opposite
in fact they're more natural they're
actually organic and better raised for
you anyway a good fresh organic egg
free-range chickens and it has a yolk
that's like the blood moon it's a deep
orange red because it's got the corrupt
noise and the chickens that are eating
it locally
yeah
all right that's my tip for today in the
market in the Mediterranean oh by the
