hey Dr will Lee here I am actually going
to take you on a special field trip into
an urban market and show you all the
healthy foods that I'm looking for and
how I think about it uh based on what I
know about the foods and their data and
what's actually inside the food you
ready come on with me first thing I'm
see actually are some
cherries cherries are amazing they are
super sweet um actually Studies have
shown that cherries and cherry juice can
reduce inflammation and reduce uh
dementia so that's pretty remarkable
summer cherries are absolutely amazing
now here's our
herb stand I love herb gardens you can
see all kinds of interesting things or
herbs uh are really kind of an
enhancement of food uh so they're not
something that you e huge quantities of
but every little bit of Mother Nature's
Pharmacy with a have actually counts
when it comes to your he let's go talk
through some of them of what I'm seeing
all right the Sims are edible
flowers and they have uh little peppery
great for the salad and as you might
expect the uh the colors of the flowers
um actually reflect some of the
bioactives that are present in them
these are just orange ones here but they
come in all kinds of different uh colors
um Basils basil uh actually is a great
bioactive uh and great for so many
things you can make a pesto out of it uh
you can add it to strawberries uh the
bioactive Bas
um reflected in sort of the really
unique delicious taste and look purple
basil this probably has some
anthocyanins uh in
it uh and let's keep on looking at look
at all the different types of Basil Thai
Basil right
here High
basil my gosh all right th th has Rose
marinic acid look at this this is
actually great to um put on roasts so
you can make a sauce out of it uh you
can make a dressing out of it absolutely
delicious um or thyme orange thy this is
a also a great thing to cook
with love to use th especially we going
to do a roast peppermint all right turns
out the peppermint also uh has some
really interesting bioactives that are
good for your health you make a lemonade
with a little bit of pepper to or mint
there's some strawberry mint to really
um light things
up I love oh Roman
chamomile chamomile has a bioactive that
actually causes
relaxation and so when you have an
herbal tea made with chamomile there you
have it look no
pesticides that's exactly what you're
looking for cuz look how are you going
to possibly wash off pesticides off
something like this so whenever you get
herbs it's best to actually look for um
uh uh pesticide free organically grown
uh uh herbs all right Greek oregano love
it Greek oregano super potent really
great fresh or
dried Sage another one of my
favorites do actually look like an
earlobe I always took think about Sage
as an ear but amazing chop it up really
finely uh and um you can make all kinds
of interesting sauces with it Purple
Sage look at that all the different
variations Teragon a great spice
actually is filled with bioactives again
these are all I just want to show you
all the things you can find in a farmer
market uh that uh has uh healthy uh
properties to it
look here's something interesting check
it out blue
popcorn take a look take up a bag of
this all right did you know that popcorn
is actually a great source of dietary
fiber which is good for your gut
microbiome uh better gut health is
better brain health and also a good
microbiome lowers inflammation the blue
color here is anthocyanins which are uh
a bioactive that actually improves your
your metabolism uh your immune system uh
and can help to fight harmful body fat
and lowers inflammation all at the same
time all right whole grains whole grains
are good we know that that's also part
of a Mediterranean diet you do whole
grain bread but I'm looking at sourdough
sourdough is a healthy bread uh and so
is dry bread um but sourdough here look
at this a chewy Tangy sourdough
bread beautiful smells great here too by
the way sourdough the tanginess of
sourdough is that she made in with a
starter called lactobacillus rudite it's
a healthy cut
bacteria that does a lot of things
fights inflammation it's been shown to
improve immunity and amazingly
lactobacilus Rite text messages your
brain uh and helps your brain release
social hormones soci hormones like
oxytocin are what you're uh what you
feel uh when you see somebody that you
haven't seen in a long time and you get
that warm fuzzy feeling so it's a mood
enhancer as well which is pretty amazing
all right all right look what I found
here I found some of my favorite garlic
Scapes these are actually the stems of a
garlic plant uh this is the
bottom and this is the top and these
guys you can actually cut them into
pieces uh and and caramelize them in the
oven with a little bit of extra virgin
olive oil a little bit of sea salt and
that's all you need like 450 for maybe 7
or 8 minutes uh and then they'll be
actually um nice and caramelized
absolutely delicious not really strong
like garlic but it's got a real alium
flavor um I like to cut it up but you
have some whole wheat pasta mix it all
together you got like a quick summer uh
lunch uh you can serve it cold room
temperature uh I I love Scapes it's
really a seasonal uh dish and another
one of my favorites radishes look at
these beautiful radishes uh they
actually contain
isothiocyanates so these are the same
things that are actually uh bio axes are
actually found in broccoli uh
cruciferous vegetables like cabbage uh
and um Bok jooy make sure you find these
uh isothiocyanates are actually great
for your metabolism they also are cancer
starving which is actually good and
radishes are great you slice them up
really thin just put them on a salad uh
a really great way to enjoy um the uh
kind of uh the the the
freshness of a root uh roots are often
very very nutritious so try some
reddish I got some more goodies to
actually share with you um uh right here
behind me is got a beautiful display of
different types of veggies in the
farmers market look how crowded it
actually is and I'm actually going to
show you what is all this healthy stuff
here garlic you really see just the uh
bulb sold dried here's fresh garlic see
it look here's like
a this is like a nights worth this is
like my saber my light saer my garlic
saber um Garlic's got allisin it's an
alium and uh it actually helps to lower
blood pressure and it helps to keep
circulation flowing SS your blood some
antiplatelet function um and here are
some uh beets look at this these are
kind of an orange beet a red beet now
beets grow close to the ground they pick
up a lot of uh nitrogen from the soil
when you chew beets they actually
interact with the microbiome of your
tongue in order to create a form of
nitrogen that when you swallow it gets
absorbed into your body into your
stomach and through your stomach into
your bloodstream as nitric oxide which
then dilates your blood vessels good for
your circulation your blood pressure
actually comes down very healthy hey

beets delicious carrots oh by the way
this is really cool you know that the
original carrots were not orange like
this okay Orange characters are bred by
Dutch farmers in celebration of William
orange uh a uh a conqueror who freed the
Netherlands from Spanish rule uh so but
the original carrots actually were
purple like this this is sort of like
the original carrot right here purple
purple on the outside yellow on the
inside um and um uh and then they were
bred to be orange so here's like a mix
all right um carrots have carotenoids a
great source of dietary fiber uh lowers
your uh cholesterol uh activates your
gut microbiome and it's good for
metabolism helps to burn harmful body
fat can actually shrink your waste
circumference you don't need to eat that
much oh by the way so here's the
interesting thing carrots actually have
all the good stuff in their root right
here but carrot greens I mean look check
this out a carrot is actually mostly
greens look at all this how tall the
greens are got a whole Treet top of
greens and when I've done research on
this food is medicine research what we
found is that the carrot is actually
good for cancer starving good for
androgenesis anti- androgenesis actually
they guess what The Carrot
Tops are twice as good so keep The
Carrot Tops make a pesto out of it chop
it up into a salad again carrots are
good Carrot Tops have twice the good
stuff look at how much there is in The
Carrot Top all right let's keep on going
there some more stuff here um radishes
and
actually have suorin in them that's what
makes them kind of sulfury and a little
bit bitter but a great flavor look at
the color love this color this is sort
of like uh almost like candy color uh
and um the radish tops also have uh
great nutrients as well but I love to
just slice up radishes freshly into a
salad uh and you could also pickle
radishes and uh you can actually create
your own probiotic uhad radish look at
all these I got I just got to show you
look at how beautiful this radish
display is
amazing all right this is food as
medicine almost like in a candy store
how beautiful this actually is all right
and by the way this is the root side
this is not usually the side you
normally see in the grocery store all
right look I also found some zucchini
these are summer zucchini green zucchini
yellow zucchini I actually want to
explain something about zucchini to you
first of all uh zucchini uh actually
will have flowers you don't see them
here but zucchini flowers uh actually uh
can be used for cooking as well but the
zucchini uh actually is a great source
of potassium and vitamin A but what I
was telling you is it actually has
routine and uh campin and these are
carotenoids that uh improve Vision all
right the summer dish I would make with
a zucchini is actually called ratou it's
actually a pronol dish you take
zucchinis you cut them up and you stew
them with tomatoes onions uh uh eggplant
and uh uh onions garlic and uh it is an
absolutely delicious stew again
zucchinis have lutein and zanthin which
is good for vision uh and has been
studied uh to improve cognitive uh
function as well so a great thing to do
with the wonderful summer zucchini which
comes in green as well as
yellow one oh look another bread display
here's what I'm looking at right away
souro bread like the basilis Rai a
starter organic even better these just
look so delicious to actually have now
breads are carbs so you don't want to
overeat carbs hard in your metabolism
but sourdough is actually a way of
getting a probiotic benefit out of your
bread so some people
ask doesn't the uh baking of the bread
kill the um beneficial act bacteria like
electop Rite yeah it does actually but
Studies have shown that in fact that uh
the fragments of the bacteria even after
they've been busted up and uh destroyed
uh actually are still biologically
active and can actually help your brain
release uh uh social hormones like
oxytocin that's amazing so when I
actually uh look here's a sunflower and
Millet uh bread made with Organic flour
uh sunflower seeds also a great source
of dietary fiber uh so uh when I look at
breads I sort of think about uh it's a
carbohydrate it's actually uh something
that is part of traditional eating
patterns including the
Mediterranean uh almost every healthy
culture contains some kind of bread or
baked good but one of my choice is
really going to be sourdough just like
this all right I just see some more
veggies these are one of my favorite
parts of the market uh let's go take a
look and see what's uh over here first
thing I'm looking at is bok choy I'll
tell you what I do with the bach Choy is
I literally take it home wash it really
well and then take a knife and slice off
the bottom here and then these leaves
individual leaves will break off and you
get kind of a stem a flat stem with a
leaf if you want to cut those in half uh
makes it a lot easier you can make
smaller pieces or you can just take the
whole thing sauté and walk with a little
bit of oil a little bit of chopped
garlic um literally you just stir fry it
for maybe 15 20 seconds add a dash of
soy sauce add a little bit of rice wine
uh and there you have it and then if you
want to really light up the flavor add a
little bit of oyster sauce to it so this
is a nice selection of Bak Choy
here let's see what else do I see here
oh spinach spinach in a bag now I wish
they didn't put it in plastic because of
course we know we're trying to decrease
the amount of microplastics but in any
event uh spinach is really healthy
spinach is a plant that a vegetable that
grows low to the ground it picks up a
lot of nitrates from the soil and one of
the things about nitrates from the soil
and spinach is that if you actually cook
the spinach and you're chewing it really
well uh the microbiome on your tongue
will interact with the nitrates from the
soil in the spinach leaves and guess
what when you swallow it that's in a
form of uh Nitric a form of nitrogen
that it absorbed in your body and turns
into nitric oxide which then is really
great for your blood vessels blood
vessel Health nitric oxide helps to
recruit stem cells and that uh can
improve your circulation it recruits
endothelial progenitor cells and plus I
just like spinach you know I like to
make a simple Spanish uh dish with
spinach a sauté spinach with a little
bit of uh olive oil and garlic and then
you add some toasted pine nuts add some
uh golden
raisins uh and um mix that together
you'll be done in literally 2 minutes
and what an amazing dish that actually
is now look at these here you actually
have sugar snap peas these are
legumes peas in a pod as they call them
but these are really great because they
are a great source of dietary fiber and
vitamins and minerals and beans are a
staple legumes are a staple of all the
healthy blue zones um sugar snap peas
honestly one of these guys you can just
eat just bite it in half and start
eating this after you wash it of course
uh but um many things you can do to cook
them so many great recipes this is a big
pile of fresh uh sugar snap peas
absolutely delicious oh look at this
here is uh red
lettuce red lettuce uh unlike the green
lettuce you would see in the salad bar
and look here's some red and green mixed
together but the red lettuce actually
contains
anthocyanins this is the natural dye
that makes the red lettuce red and
anthro signs are good for your immune
system uh decrease
inflammation uh and uh it's good for
your metabolism as
well so want to mix up your salad add a
little bit of red
lettuce all right and I see tusen kale
this is also sometimes called Dinosaur
Kale and you can see why look at the
texture on the kale kind of looks like
dinosaur skin little pebbly and it's
also called Tuscan kale this is the kind
of kale that actually is used to make uh
um Menon soup you know the little black
bits that are floating around that's
actually Tusk and kale that's actually
cooked down kale is a great source of
suanes these are the bioactives that you
also found in broccoli and they uh again
they are
anti-inflammatory and they improve the
immune system they can help improve your
teac cells uh and so this is a great
find in a market you get a bunch like
this you can actually uh roast these
actually in the oven if you add a little
bit of extra virgin olive oil a little
bit of sea salt and just uh dry them
really well and then bake them on of
sheep you'll get little kale
crisps I'm also finding broccoli Rob
look at this this is actually a slightly
bitter tasting relative of broccoli
broccoli Rob uh and uh it's one of my
favorite dishes to cook with um you wash
these leaves you chop them up uh saut
them in a little extra virgin olive oil
and garlic uh and squeeze a little lemon
on uh it is absolutely fantastic you can
cut them up if you wanted to actually
make a salad
out of it I I just think it's one of the
most delicious um of the uh Brasa family
and uh findy them in bundles like this
and here we have a head of broccoli rob
a bunch of broccoli Rob and uh they are
rich in
isothiocyanates these are suanes that
actually lower inflammation while they
raise your immune defenses and they're
absolutely delicious so this is my tour
of the urban Farmers Market uh in the uh
early summer and you can see there's a
ton of great stuff to choose from and a
l few tips for you is don't buy too much
uh food at a time this is where you want
to find out uh when your farmers markets
are actually being held buy enough for
maybe a week uh you're going to put a
bunch of stuff in your refrigerator so
you don't want to over stuff your fridge
and you don't want it to rot in the
fridge you don't want to waste food so
uh you know if you do it like they do in
the Mediterranean or in Asia you buy
just enough for um uh for a few days to
a week and that way you're not wasting
food and you're using it all while it's
still fresh now look I found something
else I want to show you this is Swiss CH
this is actually one of my favorite
vegetables to cook with um it's got
dietary nitrates as well um good for
your circulation you know here's how you
use this you actually just take it home
clean wash it off cut off the leafy part
here
is cut off the stem that stem can go
away and uh you can actually just chop
this up and sauté that I like to keep
things really simple sauté a little bit
of garlic and olive oil and again when
you're actually cooking vegetables uh
like Swiss chart or broccoli Rob or
anything we else we talked about watch
the color it under heat the color will
turn green Greener greenest and stop
cooking when it's really green don't
overdo it you know you've overdone it
when that color actually starts to dull
and so that's actually when you want to
stop cooking but here's Swiss
jard so what I was saying is that you
don't want to buy too much you want to
take it home wash it a little uh tip
that I got from uh a colleague who used
to be the safety offer officer at the
USDA told me you want to wash fruits and
vegetables for about 60 seconds in cold
running water uh even if it's uh uh
looks clean you got to realize that uh
they could have picked up uh dirt
bacteria other things while it was
transported in a truck or in a barrel
after it's can pick all these things
little tips will make things uh safer
for you to actually
eat and here are some
arugula arugula you can see often on
restaurant menus and a grocery stores
the English word they call them rocket
this is wild arugula show a bunch right
here and this actually is great for
salads obviously um it actually adds a
little spicy taste to a salad uh very
tender uh and the thing about origa is
that it's a great source of camp forall
and campol has been shown in clinical
studies to slow cognitive decline so
this is actually good for people who
want to actually combat some of the
deterioration of Aging arugula and great
a source of di fiber as
well as I look around I spot Italian
parsley now parsley is a great uh uh
herb to use in cooking the stems are
actually great for flavoring oil and the
leaves are the ones that we actually cut
up and parsley leaves is very fragrant
actually contains a bioactive called
appenine and appenine is
anti-inflammatory uh and it is uh good
for uh metabolism uh as well Studies
have been looking at appenine for it is
ability to uh slow down cognitive
decline as well so here's something that
you can actually use you always keep a a
bunch of parsley around in your fridge
because you never know what you might
need to make with it if I'm making a
salad if I'm making a soup if I'm making
a stew I'm actually uh sautéing uh some
foods I it's partially it's just a great
thing to have
around hey look what I found I found
some really nice summer strawberries you
know what I do to check whether or not
strawberries are good I smell
them the aroma of the strawberry is
really good uh I know that if you go to
some places like in Paris you can
actually smell uh strawberries from down
the block these are actually really um
good uh they are fresh and strawberries
actually contain Elric acid and anro
these have actually been shown uh to
improve vascular Health improve wound
healing uh this elic acid but here's the
thing strawberries have been also
studied uh to uh slow cognitive decline
so there's actually some uh benefits for
aging to eat strawberries as well uh and
so where does the electric acid live
it's in the flesh of the strawberry but
most of it is actually in the Little
Seeds they're called aens
see those little dot dot dot dot dot dot
dot dot dot that's actually the aen in
fact the strawberries are kind of a
conglomerate each of those is this one
fruit is actually the uh amalgamation of
a lot of tiny little fruits each of
those are the seeds of a single fruit so
uh I love strawberries if you want to
actually do something nice with
strawberries I like to eat them plain
honestly but if you want to make it a
little fancier you can actually slice
some basil up Basil's uh great
compliment flavor and basil also has
lots of bioactives coupled with the
strawberry bioactives great for your
taste buds great for your health
sophisticated taste and then if you want
to do something a little bit different
you can actually take strawberries and
take some aged balsamic vinegar
sweetened it's sweet not Added Sweet
sugar but it becomes sweetened cuz it's
concentrated and dribble it right on top
of the strawberries all right uh and
you'll have a very very sophisticated uh
dish with a little bit of vinegar in it
don't forget vinegar acetic acid
prevents your fat cells from growing as
quickly so in fact it's good for your
metabolism helps to fight harmful body
fats so this is just another example of
how you can find these amazing uh Foods
right in the Farmers Market that have
great uh
benefits I found something interesting I
se before before horse radish jelly what
is that I'm going to ask hello sir hi hi
uh I'm Dr Lee I'm just um talking about
food is medicine I'm finding in the
farmers market and uh I saw a sign for
horseradish jelly do you have that yeah
I have it right here horish jelly now
I've cut the Sugar by 20% okay that's
very good so can you tell me what what's
in horseradish jelly well it's HSE
radish that I grow patkin sugar red bell
peppers okay vinegar that's it very
simple kitchen friendly ingredients okay
you cut the sug on it yeah I did I make
a concerted effort to do that on each
one of these I make these myself okay
one batch at a time so so it's a jelly
uh what would you actually how would you
eat this what would you put it with use
it like mayonnaise mustard or ketchup
now mix it together no you can use it
like say mayonnaise would be good
whatever you put mayonnaise on oh I see
uh mustard um hot dogs hamburger but if
you want to stay away from that you can
use it vegetables oh as it as a blak um
you could use it like you would M Jelly
with
Lam okay after the fact after it's been
cook use it on the side uh you could
also use forse Rish jelly on a bagel
first thing in the morning with a little
that's a great idea just a half a bagel
though horseradish jelly on a bagel you
know I'm actually going to get one of
these things so I can actually try it
because it's so interesting I've never
had horse radish jelly cut so horse
radish is um Brasa it actually got
suanes in it which actually uh have been
studied to improve cognitive decline so
slows cognitive decline improves memory
uh includes uh improves memory function
uh and um you know it's a it's got
reduce sugar but I'm going to try it
anyway because I like to try new things
so um thank you very much you're welcome
I found something really amazing at this
uh stand R Family Farm And it is is a
bucket of edible flowers yeah they're
edible yeah so what are these can you
show me they're so beautiful yeah so
this is porridge it tastes like cucumber
and oyster and we also have the micros
in that um so the flowers taste like
that yeah the flowers taste like
cucumber and oyster amazing and let me
see hang on I love the color blue look
at look at how beautiful look at how
beautiful these flowers are
amazing let's see uh this is of course
zucchini flowers zucchini flowers uh are
found in Mediterranean cooking you can
do kind you stuff them you fry them
people will put them in cillas put into
quesadilla oh quesadilla okay that's a
great idea a little quesadilla uh
plant-based filling yeah that's great
and then what are these they're called
zabina z e b r i n a zabina and they
also have kind of a cucumber mild
cucumber taste mild cucumber taste
zabina what now how do you eat how would
you eat serve or eat these so edible
flowers are interesting and that you can
kind of put them as a varnish on
anything um I mean a lot of people come
by and they want to decorate cakes they
make them really beautiful and so
something like that I would tell them
don't get an asterion because it's a
spicy flavor it's like peppery a
little sweet but it's like a rii so that
would maybe be aing if somebody ate that
on a cake um but I would say you know
pair that with something like fish or
chicken or something like that or you
could sprinkle these out to a garden
salad and like hey
yeah and I would say nerum is perfect
for that if people like a little bit of
spicy it's amazing in a salad what is
what is this this one is um coriander
coriander and they call it the the
caviar uh like the greens world because
they kind of pop in your mouth caviar of
the greens World coriander look at that
amazing so you just like pick out the
small seeds is that basically what it is
yeah if you want the caviar part um I
think you can eat the whole you can eat
the whole thing but they're really tough
on the on the ends so just grab like the
little berries really there's little
coriander berries and just grab those
you can sprinkle them on anything well
we just sprinkle on like my oh gosh uh
tacos is like my first name they're just
they have yeah whatever because they're
sort of citrusy you get that nice um
nice strong but it's it's sort of like
Smooth at the same time yeah yeah you
can do like if you put them on like a
Carpio or something like that look what
I found here this is interesting just
want one
not two one ramp bulb usually ramps you
only find it for a few weeks during the
late spring early summer here's actually
a
pickled uh pickled version let's take a
look at this what's inside I always look
at the uh I always look at the
ingredient label here wild ramp bulbs
vinegar so ramps has got Allison vinegar
has got AIC acid good for metabolism
ramps also got alium that's good for
metabolism as well lower
water and salt that's it all right
pickled ramps I bet these are really
good that's really
cool thank you very much new discoveries
all the time and here is wild ramp
pesto I bet that's good look at that
custo made with the ramps must be really
delicious red leaf
lettuce and green leaf
lettuce red leaf lettuce green leaf
lettuce let's go check out some
mushrooms this is a really great
assortment of mushrooms and I want to
maybe point out a few things that might
be helpful uh okay so I'm seeing here
both medicinal mushrooms and culinary
mushrooms what do we mean by that
culinary means that they're used for
cooking they traditionally eating
mushrooms a medicinal means that
traditionally they've been used for
Medicine by uh traditional healers like
uh ayurvedic medicine or traditional
Chinese medicine um in traditional
medicine the mushrooms are sometimes
dried and you can find them in an
herbalist shop but um now the the
borders are blending and people actually
just eat medicinal mushrooms ideally for
their healthful uh properties I'll tell
you my opinion about this I actually
think that it's best to uh eat coolinary
mushrooms for food and leave medicinal
mushrooms for the healers um they
probably contain bioactives they
definitely contain bio like
polysaccharides and we're just still
doing the research so we don't know the
final answer on what they do for your
body probably good stuff but I sort of
um not really sure uh I would actually
eat them on a regular basis but I would
eat culinary mushrooms on a regular
basis so let's talk about those shitake
mushrooms uh great uh uh a culinary
mushroom uh I like to slice them thinly
and sauté them and there's the stype
here's the long uh stem of the mushroom
uh the cap contains beta glucan the
Stipe contains twice as much my Taki is
sort of um also a culinary mushroom it
kind of looks like a coral reef doesn't
it kind of like a piece of coral this is
all looks like a reef over here with
where's Nemo somewhere in there but
actually um delicious kind of uh almost
steak like Flavor you can Grill it you
can roast it absolutely delicious by the
way little Pro tip here when they're
forged in a while which most myi
actually is uh sometimes little
salamanders and things can be borrowed
inside there so you want to really wash
it very very carefully um farmed ones
won't actually have it but these two are
culinary
mushrooms uh and uh Chestnut mushrooms
are also culinary King trumpet uh
classically used in Asian cooking
absolutely delicious again these are
kind of a for vegetarians these are sort
of meat substitutes they have a really
strong lovely Umami flavor some of them
do um Italian oyster mushrooms over here
as well uh and but here's some of the
medicinal ones that I can see lion man
is medicinal I would kind of leave that
for the um uh I would leave that for the
pros uh and I will tell you that myi and
shitake are both Co culinary and
medicinal so that's that's kind of
blending them together but that's my
little tour of the mushroom
stand all right I am here with Adam at
the mushroom stand uh at the farmers
market and he's got some interesting
bags to show me and these are what are
they these are grow at home kits grow at
home kit mushrooms all right so what's
inside so we do all the hard work at the
farm at mushroom Queens so what you do
is you cut along the mark lines all
right cut where the x is X Mar top down
and tape it down tape the top down yeah
getting all the air out so be tight to
the top okay so then the mycelium which
is this like mated substrate which is
what this is then gets triggered to grow
mushrooms they need oxygen so cutting
this X and
allowing it so the the the bag keeps
some moisture in which is what they need
uh they need that they need higher CO2
right now as well okay and then they
need their food which is all the
substrate so you've already put that
what's in the substrate so it's a
combination of wood and soybean holes
wood and soybean holes soybean holes H
outside oh wow soybean holes and wood
wood what kind of wood car okay and so
basically and then the Mycelia are the
not the seeds of mushroom but they're
kind of the starter Roots is that what
it is how would you describe it uh yeah
so my is just the main body of the organ
so if you want to make a comparison it
could be like the roots trunk and
branches of a tree okay so that's
already in there but the new mushrooms
will start from there so yeah so all it
needs is oxygen or a big surgeon so
cutting the X here allows a lot of more
oxygen to pass by and then uh you just
need to miss this a couple times a day
and the mushrooms grow right out and
they grow right out towards you so you
cut this open up the flap and water it
every day Mist it with the spray but
Mist it with the spray butter how many
times a day morning and night morning
and night okay so what do you got there
this is a this is the it Italian oyster
that's these over here and we have gold
oyster today blue oyster as well golden
and blue you have all those here you do
normally we also Lions men okay but hang
on a second this is gold this is a gold
one right here yeah and this is a blue
oyster have a r all right hang on here's
the blue oyster and here is the gold

for when I actually go to the market uh
again don't buy too much buy enough for
about a week's worth uh make sure you
have enough from in the fridge uh wash
your vegetables really well when you uh
take them home or before you use them
and make sure you benefit from all the
delicious foods that uh uh Farmers
Market produce can actually deliver to
your taste bud
and the health it can deliver to your
body so remember my uh take-home motto
which is that you can love your food to
love your health Dr willly
